2 Drawbacks that come to mind:

1 - At 2:00 he describes the condensation collection system and notes that
he is going to "plug the line". That's OK for a quick test, but eventually
the system is going to overflow. In real life, the condensate is going to
have to be dealt with, especially if the device is used inside, say in a
bedroom. Hopefully it'll take not much more than a small bucket, but it
is an added component.

2 - Once that 32 lbs of ice melts, draining the system is going to be a bear.
With the transmission cooler, pump, fan, wood, ice, water, etc. that device
must weigh at least 50 - 60 lbs. With 32 lbs of water plus however much he
added sloshing around, it's going to be cumbersome to carry outside to drain.

True, but "to MacGyver" something is a accepted use of the word even a
quarter of a century later.

It is currently listed as a Verb in the Oxford dictionary:

This guy lives in the desert. He has made various versions of an "air
conditioner" Run buy solar or 12 V. Not complicated. For a shop or
man cave.
