What's the better way to contact Chinese restaurant owner?
Hi,
I am a graduate student of Tsinghua University and major in Information System. Our team are trying to finish a project related to Beijing Olympic Game 2008. The project's goal is to figure out and show the differences for Chinese food between native China and western counties. As you know, when in Rome do as Romans do, Chinese food does the same in your country. For example, in Unite States, even though the same dish, compare to the one in native China, they are different, maybe totally different taste. There are some popular Chinese food dishes in U.S. but you cannot find in China. And more interesting, something maybe caused by custom and culture, as you know, almost in every America Chinese restaurant, they will give you fortune cookie after you had meal. But nobody knows such thing in China. Actually, this is our project on research to know how many of them between our Chinese food and yours. Our mission is to help more and more people to know the culture of China via Chinese food whatever they are coming to Beijing for Olympic Game 2008 or not. And this is also a way to let our people learn the world outside. Why through the topic of Chinese food. As you know, there's old saying in China -- To the people foodstuff is all-important. After some research work, we came out this idea to contact Chinese restaurant's owner (or Chef) in U.S.. We think they should know such differences very well since they do business in the different world market. And they still keep in traditional way to cook for them self. So far, there are many problems needed to solve. Ex. We have almost 12 hours difference in time zone. So it's hard to phone those restaurant's owner from Beijing China and cost is high too. We have searched for their e-mail address from Internet. Unfortunately, 99% of them don't have it or unavailable. We hope we can collect 1000 samples to the date to finish done with the project. Sheesh, I've got a friend in Beijing and we talk on the phone frequently. The time zone issue is negligible for anyone of moderate intelligence. The cost is negligible, too, unless your "project" has no funding at all, in which case, it'll fail for other reasons than an inability to make a phone call. If you need help locating restaurant owners, I can put you in touch with my Beijing friend and he'll do the research for you for a modest fee. He's an American married to a Chinese woman, and a Chinese food lover at that, as well as a professional researcher. |

Go get the yellow pages, find the restaurants, and then send them a letter outlining your project and what you want. But don't be surprised if they aren't too eager to help. If you had a short list of 6 dishs that you were interested in, they might be willing to send you their recipes. But if it's some open ended thing, I wouldn't be surprised to see most not want to get involved because they will think it's going to take a lot of their time. You could also find some popular chinese recipes online, from places like foodtv.com. |

Best bet is just collect their menu. Some are written in English, some are in Chinese. I don't speak Chinese but I can read and write. I usually ask for menu written in Chinese. There I can find items I can't order from English one. Also some Chinese restaurants are franchised. |

Hi, Chinese food in U.S. is westernized Cantonese style. Best bet is just collect their menu. Some are written in English, some are in Chinese. I don't speak Chinese but I can read and write. I usually ask for menu written in Chinese. There I can find items I can't order from English one. Also some Chinese restaurants are franchised. Around my area in Florida, we have "New York Style" and "Chicago Style" Cantonese food ) The only luxury my parents had when I was growing up was to eat out, rarely, at the neighborhood Chinese restaurant. I suppose it was very Americanized, but our neighborhood was one of many nationalites and immigrants. What passes for "Chinese" in most restaurants near my home seems to be, mainly, overcooked cabbage and a few dishes with lots of carrots and broccoli.......... |

My wife used to work in a few Chinese restaurant years ago. The owners are always the hardest works - the first to arrive and the last to leave. At the end of business day, they need to do the accounting, and count the money that they earned for that day after all the expenses. The last restaurant owner my wife worked for said that he had to work until 3am every day, as he also had a liquor store next door and he needed to do accounting for both every day. Those small business owners usually have no life - work well over 12 hours a day, 7 days a week. So do not count on them spending much time with your phone surveying. Email survey is completely out of question, unless you are referred by some one they personally know. Or you are going to offer them business opportunities, like bring in a Chinese official delegation that will eat at their restaurant every day - just kidding. |

Most American Chinese food is fried. Americans also dont eat

I'd start with web sites forChinese restaurants in San Francisco. Send them an email explaining your quest. Yeah, we think the chefs who work for Chinese restaurant know the differences between real Chinese and westernized Chinese food. Can you tell me how to get them email address? The cost is OK if via Skype. But we think the time zone is a problem since they always tell us they are busy (impatient). But still many issues, we have only four people and no funding until now since we decided to start this project on winter vacation for our own interest. They don't want to talk about the recipes. Their chef may not speak Mandarin or English (only Cantonese) and so on. Thanks! Btw, can you give us a name list of your favorite Chinese dishes for the research. |

Sheesh, I've got a friend in Beijing and we talk on the phone frequently. The time zone issue is negligible for anyone of moderate intelligence. The cost is negligible, too, unless your "project" has no funding at all, in which case, it'll fail for other reasons than an inability to make a phone call. If you need help locating restaurant owners, I can put you in touch with my Beijing friend and he'll do the research for you for a modest fee. Go get the yellow pages, find the restaurants, and then send them a letter outlining your project and what you want. But don't be surprised if they aren't too eager to help. But if it's some open ended thing, I wouldn't be surprised to see most not want to get involved because they will think it's going to take a lot of their time. My wife used to work in a fewChineserestaurant years ago. The owners are always the hardest works - the first to arrive and the last to leave. At the end of business day, they need to do the accounting, and count the money that they earned for that day after all the expenses. The last restaurant owner my wife worked for said that he had to work until 3am every day, as he also had a liquor store next door and he needed to do accounting for both every day. Those small business owners usually have no life - work well over 12 hours a day, 7 days a week. So do not count on them spending much time with your phone surveying. Email survey is completely out of question, unless you are referred by some one they personally know. Or you are going to offer them business opportunities, like bring in aChineseofficial delegation that will eat at their restaurant every day - just kidding. LOL, funny! Thanks for the reply. Spoke to a friend's father who owns a restaurant. He rolls his eyes every time a white guy comes in. He know well enough to murder his cooking with a lot of salt or soy sauce and the diner will still demand the soy sauce bottle. His menu in English will have westernized hybrid dishes that will never appear in his Chinese menu. He is always so happy whan a Chinese customer comes in and orders Chinese. Then he can cook proper Chinese style. |
