Default Jointer: Help me Understand

I replaced my Crapsman Jointer a little bit ago with a Powermatic 6-inch
jointer.....which has adjustable in-feed and out-feed tables.

Why is the out-feed table adjustable? When would one need to adjust the
out-feed table.....can't figure out when I would ever need to do this? Can
someone please shed some light on this.....thanx in advance.
