So you really think that people eat chicken carcases raw, do you? They do but no here. In Japan they eat raw chicken as sashimi. I hosted some Japanese at a 2 week long event who tried to eat raw chicken. It is a bi annual event and we now have to add "Tell the Japanese not to eat raw chicken" on the risk assessment. The instance of salmonella, campilobacter and e coli is lower in Japanese chicken. Andy |
