Default 3/4" olives

I've just got a couple of brass 3/4" olives to fit new 22mm compression
fittings to old 3/4" pipe.
I see that one end has a much longer taper than the other whereas
standard 22mm olives are either barrel shaped or have the same taper
both ends.

Which way round should the tapers go please?

I have no idea what the answer is, but I do remember that it's in the
big Collins DIY book (FWIW, blue hardback version of about 8-10 years
ago.) Always fascinated me as I'd never come across asymetric olives.

The longer taper goes into the fitting.

The longer taper goes into the fitting.
