The cows get artificial insemination ( from prize winning bulls.)

Bull calves are castrated. They grow faster too and have better meat.

It so happens many years ago I was told the results of an experiment
carried out by one of the proper experimental farms. 40 years later I
forget which. They actually found that bull calves grow _faster_ than
steers.

They also found they were rather hard to manage.

as an example reference. Same weight in 13 months vs 23.
