Default Toilet Problems - S Trap

Hello All

I'm going to be doing the mother in laws bathrooms for her in the next
few weeks but have come across a slight problem. The downstairs toilet
is an S trap type (I think) where the waste pipe goes into the ground.
The problem here is that the toilet waste pipe is cemented into a
large concrete collar which protrudes into the bathroom and is a good
3 inches thick. Anyone seen these before and can you give me some
advice on how to replace the toilet with a new one?

Im worried about how I can connect the soil pipe to the new toilet. I
am not planning on buying a S trap type toilet so I will have to adapt
some new pipe work, I have used flexible adapters in the past but this
was joining on to a standard plastic soil pipe.
