Default GIVE ME A GREEK STIFATHO EVERY TIME

Stifatho: Beef and Onion Stew


Ingredients
3.5 lbs beef, cut in egg-sized chunks
3.5 lbs whole boiler onions, peeled
olive oil (for browning meat)
6 Tbsp red wine vinegar
10 cloves garlic, peeled and whole
2 Tbsp tomato paste
2 bay leaves
1 stem fresh rosemary
1 Tbsp salt
10-12 peppercorns



Preparation

Brown meat in oil.

Add remaining ingredients and water to cover by 1 inch.

Bring to a boil. Reduce heat, cover, and simmer for 3-4 hours, until only a sauce remains.

Now that's wot I call good eatin'.
