Can you roll this or do you need to brush/ spray. This is in the
garage, if that makes a differnce.

i would use a very thick roller..

don't work the roller, keep it nice and un-compacted, keep it wet.
when you cant roll an even coat on... re-wet the roller in the pan

It depends on what was used to make the texture. If it was drywall
mud, roll away. If it was the soft, spongy stuff that can be added to
paint, it will come off when you roll.

What kind of texture is this? Sprayed compound?

A roller/extension handle and a few hours work will work.

If you have a sprayer and the space is empty you could spray the
ceiling. Clean up time for the sprayer takes longer than the job at
hand - you choose.
