Default Quickset tile adhesive not recommended?

Is there any disadvantage to this? I got a bid for tile floor installation
and the contractor was not interested in using quickset. I'd like quickset
since they need to do the hallways and if we can't walk in the hallways for
a couple days, then we can't get to the bedrooms or bathrooms and would have
to stay in a hotel those days which is a lot of extra expense and a big
hassle.
With quickset, they could install tile in the morning and we could walk on
it that evening.
