I shouldn't have, but I did remove the hinge plates prior to staining
the door jambs. Now when rehanging door it binds at the bottom
opposite the hinges.

First make sure you have got the hinges firmly seated where they were.
If the hinges were tightly mortised into the jamb the small amount of
finish may be stopping it from seating fully.

You either need to recess the bottom hinge a little or shave some off
the door.

If any door has been up and operating, DO NOT PLANE OR SAND THE
DOOR. An obvious exception would be if a building shifted or
settled. The problem is almost always related to the swage of the
hinges.

Check first to see if there is anything obvious that has made the
hinge sit differently than it did before. A heavy run of paint or
varnish is enough to cause the problem. Remove the run if this is
the cause. The next step would be to tip the hinge. In your case,
install cardboard shims (cereal box thickness strips about 1/4"
wide) under the edges of the hinges that will make the hinge
barrel, the center line of the hinge, physically move away from
the strike side of the door. You can use these shims on the jamb
or the door or both. It is also possible to bend the hinge, though
shims are easier for DIY.

Sounds like the top and bottom hinges got swapped. Top hinges are more
likely to get bent over the years from the weight of the door.
