I'm looking at the Moen Aberdeen Kitchen Faucet.

There is a single handle, the Moen Aberdeen #7590SL:

Other than the handles, and whatever finish color I choose, does anyone
know about any performance differences?

I don't think there is much of a performance difference. With the single
handle you can use one hand to turn on and adjust the water and with the two
handle you typically use two hands, it just comes down to convenience or the
look you prefer.
