Well, you just sort of set it up so that the center of mass is below the
pivot points when it is empty and above the pivot points when it is
full - then it goes unstable, tips to dump the water then is stable
again
in the upright position.

True, Mikey, but put the pivot point a bit arrears of the direction you
want it to tip...... If it's centered, it could go either way!

True, unless you do like a lot of things I have seen, you build it with a
stop that only lets it go one way. But, you are right, you probably
want to make sure it tips the way you want it to go (unless, maybe
you want it to be able to flop both ways) ;-)
