That is something that happens when virus's are allowed to grow wildly.
The more cases there are, the more mutations there will be.

Viruses are like any other type of life.

They mutate when they are stressed.

Plenty of viruses mutate without any stress.

And others like smallpox hardly mutate at all
over centurys even when severely stressed.

Unfortunately they are much better and faster than Polar Bears.

Anyway, I don't see us eliminating Covid
on the whole planet very soon,
