Now Ive got the bug to build a hunting spear.
What is the best wood to use for the shaft? It needs to be not real
springy, tough, not brittle.
Ash? Hickory? What others will be good for a minimum 6' long shaft
at
least 1 1/4" in diameter?

I'd start with pine so you haven't lost much when a bad practice throw
breaks it. I made a javelin to practice with when I was on the high
school track team. Tapering and rounding the ends took a lot of
careful hand work, and throwing both hard and straight isn't easy.
You could modify a Warren hoe:

These expertly made ancient spears were spruce and pine:

"They have been worked very thoroughly and are evidence of highly
developed technological skills and of a workmanlike tradition....In
their throwing qualities, the Schöningen Spears are equal to modern
tournament javelins."
