Default Thermometers: What's the Problem with Accuracy?

Maybe check here. I never knew so little until I bought a good unit
for my outdoor meat smokers and instant read (few seconds) units. It
can with a certificate of accuracy +/- .

I very much doubt cheap units can be calibrated.
