The new check scanners process the checks immediately. A lot of
merchants actually hand the check right back to you on the spot with
"void" printed across the face.

Agree, but there could still be an NSF issue. I didn't think that could
happen but it can.

The machine scans the MICR line, the merchant enters the amount
(usually right from the register) and the account is debited right
then.
You could just hand them a blank check and it would be the same.
