If you were to choose maple I wouldn't see any point in
using quarter sawn.


That depends. Quarter-sawn maple (sugar maple, in my experience) can have some _very_ nice
looking ray fleck, and in my opinion it's worth the effort to seek it out if you have the
lumber at your disposal.
