"Pig in a poke" originated when people bought piglets in a sack (poke).
Enterprising crooks (this was before Democrats) started putting cats in bags
and selling the result pig-in-a-package (this was also before pigs in a
blanket).

I think the poster meant to say: "Old timers would call this paying to poke
the pig."
