Default Refinishing a High Chair

I am stripping an older wooden high chair and would like some suggestions on
what to use for a finish.

Two different approaches:

1. If you plan on scrapping the chair after it's outgrown use ploy. It's very
durable but really a pain to refinish.

2. If you plan on passing the chair down from child to child use shellac. It's
not as durable as poly but very easy to maintain and refinish.
