Staining exterior wood door question

Should the top/bottom/sides get stained & polyurethaned also or should
they be left alone for the wood to 'breathe'?

You don't want the door to "breathe". It will expand and contract with
changes in the humidity.
Seal it all the way around.

In another forum a suggestion was to remove the door latch mechanism
and seal the wood there as well as top/bottom. Hinge rabbets also for
the anal.
