Default Thanksgiving carving project

Had an early Thanksgiving for out of town family. Tried a Turducken -
worked GREAT!

Bone a Turkey except the drumsticks and wing tips. Fully bone a duck
and a chicken. Turkey skin side down, add stuffing, add duck skin side
down, add stuffing, add chicken skin side down add stuffing. fold up
chicken, duck and turkey. Truss turkey. Roast to 165. It coasted up
to 178. Slice and eat.

Had an early Thanksgiving for out of town family. Tried a Turducken -

Thanks Swing - it WAS damn good. The outtatowners were amazed and
delighted, especially when I sliced it clear through down the middle.

Next year a boneless ham inside the turkey...

How much of a PITA was it to bone the duck and keep it intact?


Just patience. It took about 2 hours to debone all three. You start by
cutting the skin down the middle of the back, the start carefully
teasing the meat off the carcase at the neck end and working to the
tail. When you get to the wing (and thigh), you seperate the joint at
the carcase and keep going. After carefully removing the carcase from
the breast so as not to break the skin, go after the first wing bone
and thigh bone by holding the end of the bone and teasing down to the
next joint. On the turkey, separate the wing bone and thigh bone at the
joint. For the duck and the chicken, cut the two wing tip sections off
and debone the drumstick. At this point, the wing and thigh/leg are
inside out, so you have to push them back with skin side out.

I suppose if you did this for a living, you would get much faster.

Wow! nice work.....Never occured to me to bone a turkey.....
Interesting.....Is it difficult? Easy to screw up? I would like to try that
out.

Turducken has become a staple for Christmas (just turkey for Thanksgiving)
around my house... We usually get them from Chris's Specialty Meats here
in Baton Rouge (don't think they have a website), and they are always
superb. Tried a new wrinkle this year: "turducken sausage" -- probably
just all the misc scraps, but still darned good (especially after a few
glasses of wine...)!
