Very embarrassing for Pontins if they are selecting which customers to take
bookings from on racial/ethnic grounds, and especially if they use a
discriminator that is as crude (ie imprecise) as banned surnames, given that
there will not be an exact correlation between surname and ethnic origin.

I wonder what effect this news will have on bookings and on investments by
other companies.

Yes this does sound terribly lazy, and obviously offensive..
It has to be said though that any seller of goods or services can decline
to sell to anyone they like. However discriminating on such flimsy grounds
is clearly wrong and downright lazy.
I guess they must have had issues with travellers and other groups who
caused trouble, but to not even give them the chance seems really a bit like
shooting the business in the foot.

I wonder how they found out?

I don't know but often their rates are pretty low which will attract the
less well off, I'd imagine.
My surname apparently was changed many generations ago from Gaffney to
Gaff, due to the former having Irish connections. Who knows why.
