I'm thinking of using a server instead of my NAS drive. I would probably
use Ubuntu. Any advice or problems to look out for?

use Debian stable for a (headless) server.

All the good things about ubuntu are not needed on a server.

If you are happy adminning it from a telnet or ssh session that's the
best, otherwise maybe install webmin.

You will need at least 256MB RAM. More is better for high speed disk
access.

If its windows only, you need samba.

If linux, use NFS,.

For Macs, use either, NFS if you can hack OSX otherwise it talks windows
