You did not say which OS. If its Win2K or XP (or a real OS ;-) then you
could have some fun with file and user permissions and file access logs
(requires NTFS formatted volumes).

You could create a user account which is logged on by default when you
are not there, and have it generate events into the event logger when
files are accessed etc. That way you would be able to say what files
were accessed and when, without laying yourself open to charges of
"snooping".
