It's a nice video, but not really about watch _making_. It's
about watch servicing.

With the resurgence of luxury mechanical watches it would be more
interesting to see how they are actually manufactured. It seems likely
that techniques have improved vastly but I've seen no hint of how.

Patek Philippe has a few videos that show some of the detail work
involved. This one is rather impressive:

Agreed, it's impressive, but it goes very light on the fundamentals.
Some pinion cutting is shown, but nowhere is there a clue how the
core manufacturing technology is accomplished. Nothing about making
escape wheels, thin gears or even the miniature screws that hold it
all together. Not a clue how the pallets are secured. Those are the
most interesting things about watchmaking. The CNC milling is nice,
but I'd really like to see how the end mills were made....

I watched a YouTube video some time ago that showed a lot more detail,
but was unable to located it again, so post that one. There's one by
Hamilton from 1947 that while long winded, shows a bit more detail.
