Is it safe to have silestone installed as a counter space on a barbeque
island outdoors? Is it weather safe?

The weather itself shouldn't hurt it.

But the UV might. This is a resin based product, and like all resins
it has differing resistance to UV depending on how it is formulated.

It may yellow, it may crack, or it may do nothing at all. I would find
the Silestone website and check there.
