Default Adding a water heater and not replacing the oil fired boiler

I had the oil company give me a quote for a new oil fired steam boiler and
gas water heater. Now the boiler heats the water. I know a new system will
save a lot more.

The estimator said I could not add a water heater and keep the same boiler.
Why is not possible to do this or is he just interested in selling the hole
thing to me?

Could be because part of the boiler's water jacket would not be cooled
by the water heater. You need to know what is actually heating the
domestic water

Whatever that is, if it can simply and safely be capped,
end-of-problem. True, the boiler will not be "same" as before. Any
competent plumber can give you the story as to your options with the
boiler. Oil company people would hopefully be knowledgeable about the
oil burner.

The existing boiler may not have enough output, or place for one, or any
number of other possibilities... It's also possible
snip he just interested in selling the hole
thing to me?
