outside unit they are under pressure and 'gas' leaks out as soon as i
crack the nut, what is this 'gas'? is it just in there to keep the
system at a positive presure and thus prevent any moisture etc entering
the system? If not what do i do? these caps have to be removed inorder
to connect the pipes between inside and ouside units?

it will either be protective gas or it will be vacuum (less likely)
