Default Trim for cupboard doors?

I would think a veneer would be better. Adding a quarter-inch to the
cabinets seems like quite a bit!

Wherever you think they look best! The closer to the hinge side
of the door the more difficult it will be to open the door. I presume
you are doing the entire kitchem; be sure to be consistent with the
knob placement. All of the upper cabinets (above the counter) have
their handles on the side opposite the hinges, a couple of inches from
the bottom of the door. All of the lower cabinets have the handles on
the top. The drawers have the handles centered.
