This brings me to the question:
why are cooker circuits provided as 6mmsq radials and not (e.g.)
2.5mmsq rings, if the latter will take just as much loading as the
former?

Because it is easier and neater to run one 6mm cable than two 2.5mm cables.
Also, you can't guarantee just how the current with split down two cables.
