Sarking has no single meaning beyond being something under the tiles or
slates.
Mostly in the UK its there to stop tiles blowing off.
It can do other stuff as well, though.
Dry blowing snow for example.
We once had 2" of snow in an unfelted (Edwardian built) loft.
