Electric or gas?

The method of temperature control (on standard
consumer level ovens) is based on the thermostat
turning the heating elements (electric) or
the gas flame (gas...) on and off.

In other words, the heating is an on/off deal,
with no modulation. So once the desired temperature
is reached, the system shuts down. After it drops
15 degrees (nominal...) it comes back on.

Electric controls tend to use a relay that makes
a noticable click. Gas ones tend to be gentler.

Note these are the most common types. More expensive
ones may have other methods.
