Default non slip wood finish

Take some metal and polish it really smooth. Now apply a few coats of
really slick wax. Buff if necessary. Most drying racks will hold the
towels just fine, no matter how slick it is.

So don't worry about it. My biggest concern would be moisture, so a
poly would hold up just fine. The right wood wouldn't even need a
finish.
