I have just removed the cooker hood. The chimney is just a U channel some 3
sides at 6 inches or so. Shouldn't there be an insert that slides the height
into the ceiling, or at least a plate to circle the square?

There should be a sealed duct of some sort, rising to the ceiling and
out. The U shape is just a trim cover..
