The dough recipe is extremely simple:

Flour, water and yeast with a little sugar (pinch of salt)
then mixed with vegetable oil.


It's the same as bread, but simply with oil added. (and less yeast)

Of course unless you've made bread before, the recipe itself will do you
no good as one needs to know how to work with yeast.

The yeast needs to be put into a small bowl of sugar and water and
allowed to rise.

If the water is too cold, it will never rise and if it's too hot , the
yeast will die.

As to the best temp for the water all I can say is /very/ warm...but NOT
hot.

BTW: Recently , she started using those pre-made crusts you can get in
most grocery store, it saves some time and truth is they are damn good.
Possible better than home-made.


As to the sauce, the secret to pizza sauce is /fennel/.


I should mention though, there is no finer cook than my wife...and she
can make just about anything. I was the one however, who taught her how
to make pizza. I started by trial and error back in 1972 and it took me
about ten years to get it perfected.
