Default Where would I find a pot (rheostat?) to replace the twist control in a joystick?

Pot (short for potentiometer) is the correct term. Rheostat is
another name for the same thing, but that name is usually used for
high power wire-wound devices.

A source for such devices is Digikey (
www.digikey.com). There are
other as well. You may also be able to achieve your desired effect by
adding some resisters in the circuit in series or parallel with the
current pot or perhaps even with no hardware changes at all by
changing something in software. It would depend on the actual design
of the joystick and its software driver. Unfortunately, I am not
familiar with either one. Good luck.
