Paying with a check is a very bad idea of course, for multiple reasons,
but when you use a credit card the store has your name and account
number but the bank doesn't provide them with your address, phone
number, SSN, or e-mail address. They can't find out much about you
unless you have a really unique name and a lot of time.

Once they have your name, address, and phone number they have sufficient
information to find most people's other information if they really
wanted to.

IOW, they can't (any more readily than any other means). You lied.

But you should not pay by check for other reasons.
