Temp sensor in range oven

Now that you've included that it's a gas range, that brings
up a whole new batch of possible issues. If it's coming up
the the correct temp and then shutting off, the temp sensor
is ok. Is this a pilot type or intermittent ignition type
of oven? Your issue here would seem to be in getting the
burner reignited when the temp has dropped by the
hysteresis amount.
Our oven has both an igniter and once lit, a pilot light. The pilot light
insures that it will re-ignite the flame when it goes to a low setting. Also
there is an "eye" like in a furnace, to tell if there is flame there. On
others it's just a heat sensor; hot, it's OK; not hot, it shuts fire off.
Any help?
