People say "Bless you" when you sneeze because when you sneeze, your
heart stops for a millisecond.
Our hearts normally stop for considerably more than a millisecond
between beats. Less than 5 milliseconds between beats is tachycardia,
probably vfib and fini if not corrected immediately.
I heard that it was because a sneeze blows out evil spirits, and people
wanted to give you a blessing to keep the evil spirits from coming back
and "re-possessing" you. ;-)
