I use water when I get to the Wet/Dry grits.

That's what I did as well. I kept a bunch of planed wood blocks
handy, cut to work with quarter sheets of paper, and used them for
leveling. When used wet, however, don't forget to use a fresh
backing block that hasn't warped.
