Are you talking about the 'lever' part of the latch or the actuall
'latching' bar that fits into the receiver.

Remember, that it's the lever part that does all the work of opening that
latch - and as long as there is enough to grip on the back of the gate then
it will work

The slamming post is only 75 mm wide, therefore with the 40mm bracing
and the boarding of 6mm this would only leave 29mm for the vertical
bit of wood that stops the gate .

Is this 29mm sufficient ??

Yes. just reduce the width of the doorstop and nail it so that it is flush
with the edge of the frame (remember, the size is not cast in stone).

Or simply replace the two door jambs with 4" x 2" (100mm x 50mm) - or
whatever is required to do the job that you want - again, the jamb sizes are
not cast in stone, just usually made out of any convenient sized standard
PSE (or PAR) [1] stock.

Also remember that if you are significantly increasing the weight of the
gate, then you may need stronger (or more) tee hinges to be able to carry
it - and possibly stronger fixings (or more of them) for the hanging jamb.

[1] PSE = Planed square edge. PAR = Planed all round. So mean
essentially the same.
