The reason for asking is it's sticking "in", and we're not sure if
it's a heat related function that'll sort itself out when it's plumbed
up and reached temp...


No experience of the unit you describe but normal behaviour is that this
is just a mechanical stop, ie rotation stops at the 37(or
whatever)degree rotational setting and is overcome by pressing the
button. Rotating the dial lower than the stop setting should release the
button.
