what do you use?

I don't like MDF either. However, when you need a flat, smooth, and
stable surface it works well. MDF dulls cutting tools and the dust
can make you sick. I'll use ply in place of MDF whenever possible.

I haven't tried it but I have been told
that it works quite well with hand tools,
which do not make that fine dust that
is the problem.
