If I'm seeing the pictures correctly you are starting the cut at the
widest part of the taper, cutting to the narrowest. The blade will
deflect as it enters the stock. Try reversing the angle of the jig and
flipping the leg to start the cut at the narrowest end of the leg where
the blade won't enter the wood at a "tangent" (for lack of a better word
at the moment).
