Any other ideas? What do those guys like Mythbusters do for remote
control full size cars?

My tendency would be to use hydraulics. Small control voltages from an RC
receiver could drive (or be amplified to drive) hydraulic valves.

With a bit of planning it could be made proportional, by driving a power
steering valve with a beefy 1/8-scale servo.
