You could get a 3 hole mixer like ebay item 140134660289 which work
with any hole spacing

It's nearly always easier to drill a new hole than enlarge an
existing, and lots of basins have the third hole preformed underneath
ready to punch out. Alternatively, drill the centre hole anyway, fit
the monobloc in there and fit the others with tap hole stoppers.
