You don't say whether the holes are too small or too big.
Makes quite a difference.

What are you going to do with the other hole? Isn't it going to look a
bit odd?? Why not take it back and get a double mixer tap, or of
course a single hole basin. Otherwise grind it out with some sort of
evil dremel type tool for a few hours.
