Is there a better approach I should look at? I do not have to work
with LV or NI hw if there is a better approach.

I would investigate the Omega catalog to see if they make
a board with multiple TC inputs, that simply plugs into
a PC.

If not, then I would buy an inexpensive A/D card for
a PC, and then do the conversion between volts and
degrees in software.
