Great. The idea of a dirt floor for the kitchen is a good one, won't
show spills and should even absorb big ones.

Smartass ... there will be a monolithic slab on that dirt , with
foundation walls about 8 feet tall enclosing the cellar space . The kitchen
will be on top of that ...

Yep...I just cannot resist those smart-ass remarks.I bet the new kitchen
will be squarer than the one my wife and I remodeled. I doubt if the
1898 kitchen was ever completely square even when new.
